Betty's Swiss Cheese Chicken Casserole Recipe

Chicken and Polish Sausage - A Great Make Ahead

This recipe was developed out of necessity. It goes back many years to a time when there were very few places where you can buy cooked meals to bring someone who was sick, too. Recipes for Christmas Appetizer - Tempura Chicken Wings

This sweet and sour chicken wings are delicious for holiday gatherings.

3 pounds, including chicken wings or parts Wingett

1 cup cornstarch

3 eggs, lightly beaten

Oil for frying

1 / 2 cup sugar

1 / 2 cup white vinegar

1 / 2 cup red currant jelly

1 / 4 cup soy sauce

3 tablespoons ketchup

2 tablespoons lemon juice

Directions

Preheat oven to 350 degrees.

Place cornstarch in a large resealablePlastic bag. Drop in chicken wings, a few at a time. Shake wings in bag to coat evenly. Dip the wings into the eggs.

Heat an electric frying pan or deep fryer to 357 degrees. Fry chicken wings for 8 minutes or until golden brown, juices should run clear. Turn wings occasionally while cooking. Drain on absorbent paper.

In a small saucepan, combine the sugar, vinegar, jelly, soy sauce, ketchup and lemon juice. Bring to a boil. Reduce heat and simmer, uncovered, for 10Minutes.

Place chicken wings in a greased 15x10x1-inch baking pan.

Pour half the sauce over the wings. Bake, uncovered, for 15 minutes. Turn on the wings and pour on remaining sauce. Bake another 10 to 15 minutes or until chicken run clear juices, and the coating is set.

Makes 30 wings.

1 / 3 cup cheddar cheese, shredded

1 / 4 cup fresh mushrooms, finely chopped

Directions

Prepare miniature muffin pans with non-stick cooking spray.

Use a rolling pin to roll the flat bread. Cut the bread with a 2-1/2-inch biscuit cutter.Discard the extra piece of bread or save for another purpose.

Press the bread rounds into the prepared miniature muffin tins. Roast 6-inches from heat until golden brown (about 2 to 3 minutes). Cool in the pan.

In a bowl beat the eggs, season protein, milk, parsley, salt, baking powder, thyme and pepper. Stir in the broccoli, cheese, mushrooms and onions. Spoon 1 teaspoon of toasted bread in each round.

Bake at 350 degrees will be for 15 to 20 minutes let it set. Serveimmediately.

Makes 24 appetizers.

40 large pitted black olives

3 / 4 cup Italian salad dressing

40 thin slices salami

Directions

Cook tortellini according to package directions;Drain and thoroughly with cold water.

In a large resealable plastic bag, combine the tortellini, olives and salad dressing. Seal the bag and turn bag to coat back and forth. Refrigerator for 4 hours or overnight.

Drain and discard the marinade.

To make any appetizer, take a short skewer or toothpick and thread in this order: green olives, pepperoni folded piece of tortellini, folded piece of salami, black olives and parsley twig.

Makes 40 appetizers.

Baked Chicken Recipes

A package of skin can be used chicken pieces in hundreds of different species. The decision to have chicken for dinner, is only the first step.

I will share with you a few simple ideas for baked chicken, I've used before, but remember, these are very simple ideas. Check your cookbook for detailed and complicated recipes.

Chicken & Garlic

4 fillets of skinless, boneless chicken breast

About 1 stick of butter

Garlicchopped

1 can of mushrooms sliced

Arrange chicken in casserole dish. Butter into slices and arrange evenly on top of chicken. Garlic and mushrooms. Cook at 400 * for about 45 minutes.

Cheesy Chicken

2 Skineless, boneless chicken breast

Garlic, minced

1 can of sliced mushrooms

1 can chicken soup

1 can of corn

Place chicken in baking dish, arrange the rest of the ingredients on top. Cook at 400 * forapprox 45min

These are only 2 recipes that I used, the second a "throw together" meal when I was just a piece of chicken left. It proved to be better later with another piece, but it showed me you can just add anything that sounds like a good meal, chicken. You can also leave a range of marinades from memory, either sit the chicken overnight, or the inclusion of the marinade the chicken as it cooks.
